How To Completely Change Your Salted Caramel Sauce

A rainy weekend at the trailer, and with the change in the weather, I’m thinking comfort food and something sweet!

I think homemade anything is the best – and this is the BEST Salted Caramel Sauce recipe by far!  And so easy to make too!

Salted caramel recipes are popular anytime.  You can find salted caramel sauce recipes just about everywhere and there are some really good ones too!  The sweet & salty flavor is so rich and creamy and really enhances just about anything.

What goes well with Salted Caramel?

Well, we use it on coffee cake, pancakes and now my newest recipe – Blueberry Pear & Walnut Galette. You can even make salted caramel candy!

Now this salted caramel recipe uses heavy cream, the kind that has at least 35% milk fat.

I’ve been asked “can you make salted caramel sauce without cream?”

Yes, you can!  Just substitute evaporated milk one for one if you wish.

This time I wanted to make something just a bit different, so I experimented with different flavors.  The result is this thick caramel sauce recipe and the secret sauce is almond-flavored liqueur.

I used Amaretto Di Saronno, but I’m sure there are others.  This salted caramel sauce recipe makes about a pint – and can be doubled to make more, which is what I will do the next time I make a batch.

I think these little jars of salted caramel sauce would make perfect gifts at Christmas time and for hostess gifts.  I’ll use these cute little mason jars, like the ones shown here with twine ties around them.  What do you think? You can click the link to get them for yourself!

 

Here is the Easy Salted Caramel Sauce Recipe, just for you.

  • 1 cup dark brown sugar – well packed
  • 4 tbsp. butter
  • 1 tsp. sea salt
  • 1/2 cup heavy cream
  • 1 1/2 tbsp. Amaretto (almond flavoured liqueur)

 

(Prep time – about 30 minutes):

  • In a medium sized saucepan mix the brown sugar, butter, sea salt, and heavy cream and cook over medium-low heat for about 5 minutes, stirring often, but not vigorously.
  • As the caramel begins to thicken, cook for another 2 minutes
  • Remove from heat and add the liqueur
  • Return to the stove and cook for another 2 minutes
  • Remove from heat and allow to cool for a few minutes
  • Pour into glass jars for storage
  • Tip: I poured the sauce into a 2 cup measuring cup and used that to pour into my little jars.
  • Enjoy!

This Super Easy No Bake Grasshopper Pie looks gorgeous too. First launched in the 60’s, this recipe could now be considered vintage. This was one of those classic recipes that moms everywhere took to bridge club, neighborhood potlucks, and church suppers.


Do you remember marshmallow and jellied salads? Yep I know you do! Mom always had a jellied salad, and something with marshmallows in it for all of her dinners. Well this No Bake Grasshopper Pie recipe is just like that.

There are lots and lots of grasshopper pie recipes out there, with different permutations and combinations!

There are recipes for:

  • grasshopper pie using creme de menthe & marshmallow
  • grasshopper pie with cool whip & cream cheese (our recipe in this post!)
  • grasshopper pie with Andes Mints – yummy!!

and

  • non alcoholic grasshopper pie (our recipe uses Creme de Menthe and Creme de Cacao)

My grasshopper pie recipe uses cream cheese blended with sweetened condensed milk and Cool Whip – I love the rich texture of it. And the combination of both creme de menthe and creme de cacao give it a unique taste don’t you think? I add just a few drops of green food coloring to get that gorgeous mint green color.

The recipe is so easy. Allow about an hour for total prep time – including the 20 minutes the filling has to chill.

This past weekend we were invited to have lunch with our friends, Tony and Shelly.  Shelly offered to groom the dogs, so I wanted to be sure to take something sweet.  I know for a fact that Tony loves pie, and I’ve been wanting to make this No Bake Grasshopper Pie, so this was the perfect opportunity.

I knew I could whip it up Sunday morning and it would be ready to take long before we had to leave!  That’s how quickly you can make it.

 

Crust:

  • 2 cups finely crushed cream filled chocolate sandwich cookies (24-26)
  • ¼ cup of unsalted butter – melted

Filling:

  • 8 oz. cream cheese, softened
  • 14 oz. sweetened condensed milk
  • 3 tbsp. lemon juice from concentrate
  • ¼ cup creme de menthe
  • ¼ cup creme de cacao
  • 2 cups Cool Whip –thawed

 

  • Crush the cookies using your food processor, and add the melted butter
  • Press firmly into your greased 9” pie plate and chill while you are making the filling.
  • (TIP: make sure your pie plate has a wide rim on it or use a deep dish pie plate.  I used an aluminum foil pie plate since I’m still at the trailer)
  • In a large mixing bowl, whip the cream cheese until fluffy (tip: make sure the cream cheese is really soft)
  • Gradually add in the sweetened condensed milk until smooth
  • Stir in the lemon juice and the liqueurs – (tip: I used a whisk to really mix it well – the cream cheese tends to be a bit lumpy)
  • Fold in the Cool Whip.
  • Chill the filling for 20 minutes before you build your pie.

Building the pie:

  • Pour the filling into the cookie pie crust and smooth the top with some swirls with your knife.
  • Put in the fridge for 4 hours until it is set.

Heap the chilled filling into the center of the crust.

Garnish:

Sprinkle crushed cookies over the top and serve.

How perfect is that?  Made with two kinds of chocolate chips and a splash of Grand Marnier,

this pie has the chewy, chocolate-y goodness of a warm chocolate chip cookie,

baked inside flaky pie crust.

But we’re friends right? In this post I’m sharing a recipe given to me by a friend, many years ago.

And really, just one slice won’t hurt.  Not a teensy weensy bit. And your kids will love you for it!

This recipe makes a deep dish pie – about 10″ that will serve 8-10 people.  The pie is so rich and filling, a small sliver will do.  But be prepared for your guests to ask for seconds!  And they will certainly ask for the recipe. Yes.  While making this pie is really easy, we have to talk about the foundation.  And that’s the flakiest, yummiest pie crust ever!

See how flaky the pie crust is in this picture?  There are many ways to make pie crust, but after 40 years of baking pies, this is my GO TO recipe every time.  The magic happens with the blending of flour and fats.  I’m a firm believer in combining both butter and vegetable shortening.  My Mom and Grandma always used Crisco, and their pies were amazing.  But I love the taste of butter and how golden my pie crust bakes because of it.  So now I combine both in my no fail recipe – you can see the recipe here!

Now I served this Chocolate Chip Cookie Pie at my sister’s recently.  We had the Snider family together, and that included my brother, David, my sister Cathy and her family and of course Mark and I and the pups.  It was so much fun to see everyone! Of course I’m usually asked to bring the dessert! Translation = Pie. 🙂 And this yummy confection did not disappoint.

Ingredients
  • 1 pie crust 10" deep dish, unbaked, chilled for 1/2 hour
  • 3 large eggs lightly beaten
  • 1 1/2 cups white sugar
  • 6 tbsp butter melted & cooled
  • 2 tbsp. orange liqueur
  • 3/4 cup all purpose flour
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chips
  • 1 cup chopped walnuts
Instructions
  1. Combine the eggs, sugar, butter and liqueur and stirring lightly until blended
  2. Stir in the flour
  3. Add the chocolate chips and walnuts
  4. Stir all to combine well
  5. Pour into the pie shell.
  6. Bake in the bottom third of a preheated oven at 350F/180C for one hour or until a knife comes out clean.
  7. Chill 4 hours before serving (or overnight)
  8. To warm, place in the oven at 375F for 10 minutes.
  9. Garnish with real whipped cream and hot fudge sauce!

Why an Eggnog Cheesecake?

I wanted to make this Easy Eggnog Cheesecake Recipe last Christmas, but I just wasn’t able to get to it with everything else we had on the go.

Life’s like that, right?

So knowing I was in charge of desserts for Christmas Eve, there could be no question, that this Easy Eggnog Cheesecake would be on the menu!

 Instant Pot, Slow-Cooker or Oven?

I’ve been baking quite a few cheesecakes in either my slow cooker or Instant Pot lately.  It’s been awhile since I actually baked one on the oven.  One of the issues I’ve had when baking cheesecakes in the past is that the top would crack, because the oven was either too dry or too hot – or both!

A Very Important Step!

I also would recommend that you place parchment paper in the bottom of your spring form pan before you make the graham cracker crust, so that the cheesecake will slide off the bottom easily once it is cooled.  You won’t believe how many times I forget this important step!

Step-By-Step Instructions:

This Easy Eggnog Cheesecake Recipe calls for the graham cracker crust to be pre-baked, so before you do that, wrap the bottom of the pan in aluminum foil – two layers for sure.  Then when you add the cheesecake filling, the entire pan is placed inside a large roasting pan, with about 1″ of water all around.  We use a 9″ springform pan for this cheesecake, so a larger pan works well. (see the video below!)

What’s a Bain Marie?

This is where my love of baking shows has really helped me!  When I’ve watched the Great British Baking Show or even the new Great Canadian Baking Show, the experienced bakers use a ‘water bath’ or bain marie as it’s also known.  What this does is keep the cheesecake baking at a consistent temperature, and allows the steam to keep the inside of the oven moist.  You can see how I’ve done in this in the video below.

 

Once the eggnog cheesecake is baked, remove it from the water bath and let it cool for about 10 minutes.  Then slide a knife around the edge to loosen the cake from the pan, but still keep the ring around the cake – you can loosen the clip just don’t take it out.  I like my cheesecakes to set up overnight, and that is exactly what I did here.

When you are ready to serve your deliciously Easy Eggnog Cheesecake, run your knife under really hot water, it will make the slicing process so much easier!

Base
  • 1 cup graham cracker crumbs
  • 2 tablespoons white sugar
  • 3 tablespoons butter melted
  • 3 pkgs cream cheese 8 ounce packages, softened
  • 1 cup white sugar
Topping
  • 1 cup pecan halves roasted
  • 1 cup dark brown sugar
  • 1/2 cup butter melted
  • 1 tbsp rum
  • 1/8 tsp ground nutmeg
Filling
  • 3 tablespoons all-purpose flour
  • 3/4 cup eggnog
  • 2 eggs
  • 2 tablespoons rum
  • 1 pinch ground nutmeg
Instructions
Directions
  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a medium bowl combine graham cracker crumbs, 2 tablespoons sugar and butter. Press into the bottom of a 9 inch spring form pan.
  3. Wrap the bottom of the pan with aluminum foil

  4. Bake in preheated oven for 10 minutes. Place on a wire rack to cool.
  5. Preheat oven to 425 degrees F (220 degrees C).
  6. In a food processor combine cream cheese, 1 cup sugar, flour and eggnog; process until smooth. Blend in eggs, rum and nutmeg. Pour mixture into cooled crust.
  7. Place pan inside a large roasting pan with 1" of water.  This is the water bath or 'bain marie'. 

  8. Bake in preheated oven for 10 minutes.
  9. Reduce heat to 250 and bake for 45 minutes, or until center of cake is barely firm to the touch. Remove from the oven and immediately remove the cheesecake from the water bath. 

  10. Let cool for 10 minutes and then loosen cake from rim. Let cake cool completely before removing the rim, preferrably overnight.

  11. Mix the topping ingredients in a small saucepan on top of the stove, and bring to a boil.  Let cool, and spread the topping on your cheesecake when you are ready to serve.

S’mores Magic Cookie Bar Pizza!

S’mores recipes are really popular right now and this one is no exception!

My mom used to make Magic Cookie Bars when we were kids but she called them Hello Dolly’s.   The ooey gooey combination of chocolate, coconut, graham crackers topped with a thick layer of sweetened condensed milk – oh wow!  You know what I mean!

This recipe has been baked I would guess millions of times and is also known as Magic Cookie Bar or Seven Layer Squares.  I wanted to make a sweet treat to bring to my office, but didn’t want to include the walnuts – there are so many serious nut allergies these days.

Everyone loves s’mores right?  So it was marshmallows to the rescue – mini-marshmallows that is.  I layered them on the bottom and then again on the top.  The sweet smell of baking chocolate, coconut and marshmallows was incredible and it was all I could do to not dig in! Just like s’mores around the campfire!

I decided to use a tart tin, instead of the usual square baking pan – I love doing that, converting a recipes for squares to a pie or tart, I’m always thinking in circles I guess! They don’t call me @pieladybakes for nothing! Once baked I sliced it with my pizza cutter.  Cool huh?

I started with  graham cracker crust bottom, followed by a layer of mini-marshmallows, then a cup of white chocolate chips, unsweetened desiccated coconut, then a cup of dark  chocolate chips, and a final layer of mini-marshmallows.   All topped with 300 ml of sweetened condensed milk.  Yum-my!

As it baked the marshmallows started to pop up around the edges – it was pretty cool.

Just before I serve my S’mores Hello Dolly’s Tart, I drizzle it all with my special homemade chocolate sauce.

Ingredients
  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 1 cup unsweetened coconut
  • 1/2 cup dark chocolate chips
  • 1/2 cup white chocolate chips
  • 1 can sweetened condensed milk 10 oz
  • 1 3/4 cups mini marshmallows
  • Chocolate Sauce
Instructions
  1. Place the oreos in your food processor and blend until crushed
  2. Press the oreo mixture into the bottom of a greased tart tin
  3. Mix the graham cracker mixture on top of the oreo cookie base
  4. Layer half of the mini marshmallows
  5. Layer the white chocolate chips
  6. Layer the unsweetened coconut
  7. Layer the dark chocolate chips
  8. Pour the sweetened condensed milk over all
  9. Top with the remaining half of the mini-marshmallows
  10. Bake at 375F/190C for about 40 minutes - be sure to check your oven at 30 minutes. When those marshmallows are golden brown you know your S'mores Hello Dolly's Tart is done!

Easy Old Fashioned Coffee Cake With Caramel Sauce. Oh yeah!

 

My grandmother was a good cook, but she really excelled at baking.  One of the best memories I have is smelling her coffee cake baking in the oven.

The aromas of brown sugar, and cinnamon coming from the kitchen were almost too much to wait for sometimes!  This easy coffee cake recipe recreates that memory for me every time.  The original recipe actually comes from another family member, my Dad’s cousin Marie.  She was also a spectacular cook and a lovely woman.  I have fond memories.. 🙂

I’ve wanted to bake this recipe for some time now, and I’ve added a few updates of my own- but only to make it easier and quicker to make!  This is not a yeast coffee cake – but has more of a pound cake texture – full of creamy goodness like cream cheese and butter.   Yummmmm…..

So here it is!  I use my food processor to blend the dry ingredients and the cream cheese and butter.  I love using my food processor and am learning to use it more and more in my baking.

We recently had our son Adam, and his girlfriend Adrienne over for brunch.  I had just purchased a new kitchen island for our tiny apartment — so that I would have a lovely new space to bake on and to make videos!  Of course it’s one of those “build it yourself’ project and was just to heavy for Mark and I to carry up the three flights of stairs.

So while everyone was busy with bringing all the pieces upstairs from the garage, I got busy baking this scrumptious coffee cake.  I love it because it’s so easy to bake, and so delicious, it’s a hit every time.  Adam says it’s his favorite kind of cake!

One of the great things about this recipe is that there are no fancy ingredients.  You will probably have all of this in your pantry – except maybe for the cream cheese.

Ingredients:

Topping:

  • 4 tbsp. melted butter
  • 1 cup dark brown sugar
  • 1 cup chopped walnuts
  • 2 tsp. ground cinnamon

Coffee cake:

  • 3 tsp. baking powder
  • 2/3 cup white sugar
  • 1 ¾ white flour
  • ½ tsp. salt
  • 4 oz. plain cream cheese
  • 1/3 cup unsalted butter
  • 1 cup half and half cream
  • 1 egg
  • ½ tsp. vanilla

Delicious easy to make old fashioned coffee cake includes brown sugar, cinnamon, fresh walnuts all swimming in creamy caramel sauce. It's the bomb!

Instructions:

  1. Mix the brown sugar, cinnamon and melted butter well
  2. Stir in chopped walnuts and set aside
  3. In food processor add dry ingredients, baking powder, flour, white sugar, salt, and pulse until blended
  4. Cut softened cream cheese and butter into chunks and add to food processor and pulse until blended. The mixture will stick together if pressed in your hand.
  5. Put the mixture from the food processor into a large bowl.  Make a well in the centre and add the cream, vanilla, and egg.  Break the egg yolk and blend slowly, just until everything is moistened.  Like when you are making muffins.
  6. Preheat the oven to 375 and grease and line a 8 X 8 square pan.
  7. Press the cake mixture into the plan
  8. Add small chunks of cream cheese around the top – I push them in slightly with my finger!
  9. Spoon on the brown sugar topping (this will sink into the cake as it bakes)
  10. Bake for 30 to 35 minutes.

Let cool and Enjoy with a smoky dark coffee.

Garnish:

I swirl caramel sauce* and a light icing sugar glaze over the cake once it’s cool.  It looks pretty and makes the cake taste even sweeter!

*I melt caramels in the microwave and stir in heavy cream – easy and delicious!
