This easy hand pies recipe is a perfect recipe for kids!  I just discovered frozen puff pastry a short time ago.  Yes, I know welcome to the 21st century! But being a scratch baker, I couldn’t imagine that something frozen and packaged could taste as good as something that I could prepare from scratch.  Boy was I wrong!  I used frozen puff pastry, for the first time a few weeks back, when I made Salted Caramel and Chocolate Mousse in Puff Pastry.  It was pretty amazing and received great reviews from my family and our RV neighbors, at the Double M.  We are full time (almost) RV’ers, downsizing and getting ready for life on the road.  So I’ve been experimenting with recipes I can bake in the RV’s gas oven.

Remember Pop Tarts?  Well I think this easy hand pies recipe comes pretty close to being a copycat!  🙂

Now cherry hand pie recipes are really popular, you see them everywhere on Facebook and Pinterest!  But we love blueberry pie too, so why not have both?

Preparation: (prep time – 30 minutes, start to finish)

Defrost the puff pastry in your refrigerator overnight.  Separate the dough into two squares (the brand I use does this for you)

Spread a piece of parchment paper and a little flour to make rolling easy.

Roll out the square of puff pastry, fairly thin into a rectangle. (the instructions will say 12 X 9)

Cut the pastry into small squares – you will get 6 squares per section.

Place the small square of puff pastry on the baking sheet you will use.

Using a teaspoon the blueberry filling in on the one side of the square – leaving enough room so that you will be able to fold over the dough

Fold the dough over and pinch the edges closed.  I like to press the edges with a fork

Brush the pastry with an egg yolk wash and then sprinkle with sugar.

Repeat until finished and do the same for the second square of puff pastry, using the cherry pie filling.

Bake at 375 F for 15-20 minutes – until the pastry is flaky and golden.

Let cool before serving as the filling will be very hot!

Garnish:

Mix up some icing sugar glaze ( 3 parts icing sugar to 1 part water) and drizzle on the pies when they are still warm.  Yum!

This Super Easy No Bake Grasshopper Pie looks gorgeous too. First launched in the 60’s, this recipe could now be considered vintage. This was one of those classic recipes that moms everywhere took to bridge club, neighborhood potlucks, and church suppers.


Do you remember marshmallow and jellied salads? Yep I know you do! Mom always had a jellied salad, and something with marshmallows in it for all of her dinners. Well this No Bake Grasshopper Pie recipe is just like that.

There are lots and lots of grasshopper pie recipes out there, with different permutations and combinations!

  • non alcoholic grasshopper pie (our recipe uses Creme de Menthe and Creme de Cacao)

My grasshopper pie recipe uses cream cheese blended with sweetened condensed milk and Cool Whip – I love the rich texture of it. And the combination of both creme de menthe and creme de cacao give it a unique taste don’t you think? I add just a few drops of green food coloring to get that gorgeous mint green color.

The recipe is so easy. Allow about an hour for total prep time – including the 20 minutes the filling has to chill.

This past weekend we were invited to have lunch with our friends, Tony and Shelly.  Shelly offered to groom the dogs, so I wanted to be sure to take something sweet.  I know for a fact that Tony loves pie, and I’ve been wanting to make this No Bake Grasshopper Pie, so this was the perfect opportunity.

I knew I could whip it up Sunday morning and it would be ready to take long before we had to leave!  That’s how quickly you can make it.

 

Crust:

  • 2 cups finely crushed cream filled chocolate sandwich cookies (24-26)
  • ¼ cup of unsalted butter – melted

Filling:

  • 8 oz. cream cheese, softened
  • 14 oz. sweetened condensed milk
  • 3 tbsp. lemon juice from concentrate
  • ¼ cup creme de menthe
  • ¼ cup creme de cacao
  • 2 cups Cool Whip –thawed

 

  • Crush the cookies using your food processor, and add the melted butter
  • Press firmly into your greased 9” pie plate and chill while you are making the filling.
  • (TIP: make sure your pie plate has a wide rim on it or use a deep dish pie plate.  I used an aluminum foil pie plate since I’m still at the trailer)
  • In a large mixing bowl, whip the cream cheese until fluffy (tip: make sure the cream cheese is really soft)
  • Gradually add in the sweetened condensed milk until smooth
  • Stir in the lemon juice and the liqueurs – (tip: I used a whisk to really mix it well – the cream cheese tends to be a bit lumpy)
  • Fold in the Cool Whip.
  • Chill the filling for 20 minutes before you build your pie.

Building the pie:

  • Pour the filling into the cookie pie crust and smooth the top with some swirls with your knife.
  • Put in the fridge for 4 hours until it is set.

Heap the chilled filling into the center of the crust.

Garnish:

Sprinkle crushed cookies over the top and serve.

Where do Nanaimo Bars come from? Well, Nanaimo, British Columbia, Canada in about 1953 and we’ve been in love with them ever since.  

Mom’s recipe card actually says Chocolate Squares, and that makes sense because that was the original name for Nanaimo Bars!

This recipe was given to my Mom by the organist at our Church.  We loved them so much and would beg Mom to make them.

We didn’t know they were called Nanaimo Bars back then, so we just called them ‘Miss Hume Squares’ cause that was her name!  Crazy, right?

 

To this day I just can’t resist one, and they are often included on the dessert tray at meetings and conferences.  

They are often cut into really large squares, and really, you only need a small piece to enjoy that amazing sweetness.

This recipe doesn’t use custard powder, but everything else is the same, including cocoa, graham cracker crumbs, coconut and confectioner’s sugar.  

I like how you make the recipe in layers, the bottom layer includes all the crunchy chocolate-y goodness, and includes rolled oats, graham crackers, walnuts and coconuts.

 The custard filling layer is full of sweet butter and confectioners sugar and then there’s that delicious layer of dark melted chocolate!

The classic Nanaimo Bar recipe has a creamy yellow custard filling, but the mint green fillings are very popular too, especially during the holidays, like Christmas or St. Patrick’s Day! Just a few drops of green food colouring and you’re all set.

I love the ease of cookie bar recipes too, but this time I wanted to make a very fancy dessert, so I used a pyrex pie plate instead of a baking pan.  

And when I was finished, I topped the nanaimo bars with some delicious dark and white chocolate buttons!

So I’m serving this Ultimate Nanaimo Bar recipe as an elegant chocolate pie, and just in time for National Pie Day on January 23rd!

What you Need for your Ultimate Nanaimo Bar Recipe:

 

Bottom Layer:
1/2 cup butter
2 squares semi-sweet chocolate
1/3 cup sugar
1 tsp vanilla
1 egg
1 cup rolled oats
1 1/2 cup desiccated coconut
1/2 cup walnuts

 

Custard Filling:

3 tbsp butter
1/2 tsp vanilla extract
pinch of salt
2 cups icing sugar
2 – 2 1/2 tbsp whole milk

 

Chocolate Topping:
2 squares semi-sweet chocolate
1 tbsp butter

 

Let’s Make It!

  Bottom Layer:


  1. Butter or Grease a 9″ pie plate
    2. Melt butter and chocolate in a saucepan over hot water
    3. Remove from heat and stir in sugar, vanilla, egg, rolled oats, coconut and walnuts
  2. Let the mixture cool for about 10 minutes, until it’s ok for you to touch it
    4. Butter your fingers and press the mixture into a 9″ greased pie plate
    5. Cover and put it in the refrigerator while mixing the next two steps.

Custard Filling:

  1. Mix softened butter, vanilla, and salt until smooth and creamy
    2. Blend in icing sugar alternatively with the cream until everything is blended and the icing is very smooth and
    spreading consistency.
    3. Chill the custard while getting the Chocolate Topping ready.

Chocolate Topping:

  1. Melt semi-sweet chocolate and butter, stir until smooth

Putting it all together

  1. Spread the custard evenly over the bottom layer mixture.
    2. Smooth with a spatula
    3. Spread the Chocolate Topping over the Icing.
    4. Cover with plastic wrap and store in the refrigerator until ready to serve (at least 2 hours)

When you are ready to serve your Nanaimo Bar Pie, I would suggest you make the slices very small, because it is incredibly sweet!

Biting into a freshly baked Date Square can be a bit tricky.  That delicious crumbly topping full of buttery brown sugar goodness will crumble all over you, if you aren’t careful.

But that really does take second place to the creamy date filling that swirls around in your mouth with the yummy cookie base and topping.

Date Squares are definitely a triple layer of awesome goodness!  They are also known as Newfoundland Date Crumbles and there a number of different recipes out there.

While there are lots of recipes out there – I like the one from Robin Hood – Ooey Gooey Date Squares.

But in my humble opinion, the very best homemade date squares recipe I’ve ever eaten comes from the one I’m about to share with you and that was created by my Grandma Snider.

What you need:

This recipe uses a 9 X 9 baking pan, but if you double the recipe it’s perfect for a 13 X 9 baking pan and that means freezing some for yummy treats later!

Crumb Mixture:

  • 2 cups oatmeal
  • 1 cup flour
  • ¾ cup brown sugar
  • Pinch salt and baking soda
  • 1 tsp baking powder
  • ½ cup shortening

Filling:

  • 1 cup dates
  • 1 cup water
  • ½ cup brown sugar
  • 1 tsp lemon juice
  • pinch of baking soda

How to Make it:

Preheat oven to 350F

Base and Topping:
1. In a large bowl combine all ingredients together well, making sure the shortening (or butter) is blended.  Then split the crumb mixture in half – one part
for the bottom in a well greased plan, and one part for the top of the squares.

I line the pan with aluminum foil and then grease it.

Filling:
1. Combine the filling ingredients in a medium saucepan and stirring often, bring to a boil, and then cook over low heat until thick. Cool
before spreading.

Make the Date Squares:
1. Press one half of the crumb mixture in the bottom of a 9 X 9 square pan, that you have lined with aluminum foil
2. Spread the Date mixture evenly
3. Top with the remaining crumb mixture
4. Bake at 350F 35 – 45 minutes or until top is golden brown.
5. Cool and cut into squares right away.
6. Store in an air tight container.
7. These Date squares freeze really well!
8. Enjoy.

Ingredients
Base and Topping:
  • 2 cups oatmeal fine (not instant)
  • 1 cup flour
  • ¾ cup brown sugar

  • ½ cup shortening or butter if you prefer
Filling
  • 1 cup dates chopped
  • 1 cup water
  • ½ cup brown sugar
  • 1 tsp lemon juice
  • pinch baking soda
Instructions
Base and Topping:
  1. Blend all ingredients together well, making sure the shortening is blended and split the mixture in half – one part for the bottom in a well greased plan, and one part for the top of the squares.
Filling:

Make the Date Squares
  1. Press one half of the dry mixture in the bottom of a 9 X 9 square pan, that you have lined with aluminum foil

  2. Spread the Date mixture evenly
  3. Top with the rest of the Dry mixture
  4. Bake at 350F 35 - 45 minutes or until top is nicely golden.

  5. Cool and cut into squares right away.
  6. Store in an air tight container.
  7. These Date squares freeze really well!
  8. Enjoy.

I think slow cooker anything is the perfect way to cook on the weekends.  Kind of a fix it and forget about it, if you know what I mean!  And I do use my slow cooker a lot – as you know from some of my recipes!

Everything from cheesecake to pulled pork, yes indeedy.  Does anyone say ‘yes indeedy’ anymore?  Oh well, just my country gal slang I guess.  Here are some of my favorite slow-cooker recipes!

Now I don’t know about you, but rice pudding has not been on the top of my cravings list for many years.  In fact, my mom used to love the stuff, but we always had it cold, and it was kinda sticky and yucky.  And she put nutmeg on her baked rice pudding! Shudder.  Oh well, to each their own right?

And rice pudding was always one of the ‘dessert choices’ at the local diner.  And it was kept under a glass case, looking like it had been there for quite a while, if you know what I mean. I wonder if their old fashioned rice pudding was made with minute rice? 🙂

So when my sweetie asked me to make him some rice pudding the other day, I kinda went Huh?  He wanted an old fashioned rice pudding with raisins. 

But of course I should have know that he had found an amazing recipe for me to try, and even better it was a homemade slow cooker rice pudding recipe!  Enough said!

But this old fashioned slow cooker rice pudding recipe comes from one of our new food magazines here in Toronto.  I just love finding these recipe treasures.

How Many Kinds of Rice Pudding Recipe are There?
There are lots of old fashioned rice pudding recipes out there.  Baked rice pudding recipe, Crock pot rice pudding recipe and all of them have that secret ingredient.  What’s that you say? Homemade.  Homemade anything is best and this homemade rice pudding recipe is the BEST.

So, how to make old fashioned rice pudding:

This old fashioned rice pudding recipe in the slow cooker is so creamy and easy to make, uses Arborio rice and raisins, and is THE Ultimate Comfort Food!  Be sure to double the recipe though, coz it won’t last long!

So with all of the ingredients in hand, I set out to put together this awesome old fashioned rice pudding with raisins recipe.  Now this recipe uses whole milk.  You can swap that out for cream, half and half (half milk half cream) some recipes use coconut milk and sweetened condensed milk too.  But we’re not getting fancy today.  Just plain old fashioned rice pudding.  OK?

 

  • ½ cup (125 ml) Arborio rice
  • ½ cup (125 ml) sugar
  • 4 cups Cream or whole milk (3%)
  • 3 large Egg yolks (Tip: freeze the whites for later!)
  • 1 tsp (5 mL) Vanilla
  • ¼ twp (1 mL) Cinnamon
  • ½ cup (125 ml) Raisins or dried cherries, cranberries or blueberries (your choice!)

 

 

 

Pour the rice, milk and sugar into your slow cooker (spray with cooking spray) and cover and cook for 3.5 to 4 hours.  Each hour give the rice a stir and cook until the rice is a bit mushy.

When that’s done, whisk the eggs together with a ½ cup of the hot rice mixture.  This is called tempering the eggs.

Then slowly mix this back into the slow cooker rice mixture.  You need to be careful here, since we don’t want scrambled eggs in our old fashioned rice pudding!

Then you can add the raisins (or if you choose dried cranberries, cherries or blueberries!), vanilla, cinnamon.

Cook for another 15 minutes.

A rainy weekend at the trailer, and with the change in the weather, I’m thinking comfort food and something sweet!

I think homemade anything is the best – and this Easy Salted Caramel Sauce recipe is the best by far!  And so easy to make too!

Salted caramel recipes are popular anytime.  You can find salted caramel sauce recipes just about everywhere and there are some really good ones too!  The sweet & salty flavor is so rich and creamy and really enhances just about anything.

What goes well with Salted Caramel?

Well, we use it on coffee cake, pancakes and now my newest recipe – Blueberry Pear & Walnut Galette. You can even make salted caramel candy!

Now this salted caramel recipe uses heavy cream, the kind that has at least 35% milk fat.

I’ve been asked “can you make salted caramel sauce without cream?”

Yes, you can!  Just substitute evaporated milk one for one if you wish.

This time I wanted to make something just a bit different, so I experimented with different flavors.  The result is this thick caramel sauce recipe and the secret sauce is almond-flavored liqueur.

I used Amaretto Di Saronno, but I’m sure there are others.  This salted caramel sauce recipe makes about a pint – and can be doubled to make more, which is what I will do the next time I make a batch.

I think these little jars of salted caramel sauce would make perfect gifts at Christmas time and for hostess gifts.  I’ll use these cute little mason jars, like the ones shown here with twine ties around them.  What do you think? You can click the link to get them for yourself!

 

Here is the Easy Salted Caramel Sauce Recipe, just for you.

  • 1 cup dark brown sugar – well packed
  • 4 tbsp. butter
  • 1 tsp. sea salt
  • 1/2 cup heavy cream
  • 1 1/2 tbsp. Amaretto (almond flavoured liqueur)

 

(Prep time – about 30 minutes):

  • In a medium sized saucepan mix the brown sugar, butter, sea salt, and heavy cream and cook over medium-low heat for about 5 minutes, stirring often, but not vigorously.
  • As the caramel begins to thicken, cook for another 2 minutes
  • Remove from heat and add the liqueur
  • Return to the stove and cook for another 2 minutes
  • Remove from heat and allow to cool for a few minutes
  • Pour into glass jars for storage
  • Tip: I poured the sauce into a 2 cup measuring cup and used that to pour into my little jars.
  • Enjoy!

A delicious and easy Salted Caramel Sauce Recipe that makes up a thick sauce in minutes using heavy cream. We completely change the flavor with a hint of almond by adding almond liqueur, like Amaretto!
