Well what if I were to tell you that you could make these delicious little sugar bombs yourself, and very easily too?
And that they were jam packed with healthy ingredients, like dates? AND…

Homemade Date Squares are already Vegan, and so easy to convert to Gluten-Free!

All of that buttery date filling sandwiched between delicious brown sugar, flour and more butter!

So in this post I share my Grandmother’s famous Homemade Date Squares Recipe, that’s been in our family for several generations.  And I’ve made a short video to help you put it all together too!

This Homemade Date Squares Recipe is even better than the ones you see in your favorite coffee store.  Just sayin.

Biting into a freshly baked Date Square can be a bit tricky.  That delicious crumbly topping full of buttery brown sugar goodness will crumble all over you, if you aren’t careful.

But that really does take second place to the creamy date filling that swirls around in your mouth with the yummy cookie base and topping.

Date Squares are definitely a triple layer of awesome goodness!  They are also known as Newfoundland Date Crumbles and there a number of different recipes out there.

While there are lots of recipes out there – I like the one from Robin Hood – Ooey Gooey Date Squares.

But in my humble opinion, the very best homemade date squares recipe I’ve ever eaten comes from the one I’m about to share with you and that was created by my Grandma Snider.

What you need:

This recipe uses a 9 X 9 baking pan, but if you double the recipe it’s perfect for a 13 X 9 baking pan and that means freezing some for yummy treats later!

Crumb Mixture:

  • 2 cups oatmeal
  • 1 cup flour
  • ¾ cup brown sugar
  • Pinch salt and baking soda
  • 1 tsp baking powder
  • ½ cup shortening

Filling:

  • 1 cup dates
  • 1 cup water
  • ½ cup brown sugar
  • 1 tsp lemon juice
  • pinch of baking soda

How to Make it:

Preheat oven to 350F

Base and Topping:
1. In a large bowl combine all ingredients together well, making sure the shortening (or butter) is blended.  Then split the crumb mixture in half – one part
for the bottom in a well greased plan, and one part for the top of the squares.

I line the pan with aluminum foil and then grease it.

Filling:
1. Combine the filling ingredients in a medium saucepan and stirring often, bring to a boil, and then cook over low heat until thick. Cool
before spreading.

Make the Date Squares:
1. Press one half of the crumb mixture in the bottom of a 9 X 9 square pan, that you have lined with aluminum foil
2. Spread the Date mixture evenly
3. Top with the remaining crumb mixture
4. Bake at 350F 35 – 45 minutes or until top is golden brown.
5. Cool and cut into squares right away.
6. Store in an air tight container.
7. These Date squares freeze really well!
8. Enjoy.

Ingredients

When I first started making coleslaw and taking it to family dinners, I would use a hand grater, but when my sweet mother-in-law found out, she went right out and bought a small food processor for me.  I was overcome with the gift, but her explanation was simple.  “This is the best creamy coleslaw recipe I have ever tasted, and if I want it every time you come for dinner, then I need to know it isn’t such a chore for you to make.”  Isn’t that sweet? 🙂

Now you know I used that little food processor for a very long time, it was a Cuisinart, I think, and it just gave up the ghost and stopped working a couple of months ago.  I used it for everything from delicious flaky pie crust to chopping up my coleslaw veggies.

So I had to go shopping for a new one.  After researching the market, the best deal I could find was on Amazon.  If you can get one for under $70, then grab it, because that’s a great deal.  I looked at these two and chose the Cuisinart based on experience.

So let’s get started and make Your Best Creamy Coleslaw Recipe!

One medium sized head of green cabbage

2-3 small cooking onions

2-3 medium carrots

1 1/2 cups mayonnaise or your favorite salad dressing

2 tbsp. sugar

Salt and pepper

Pinch of paprika

 

Preparation: (Prep time – 30 minutes)

Cut the cabbage into chunks and shred in your food processor – but pulse only, so that you get a coarse grind.

Chop the onion and the carrots in the food processor as well, chopping both finely.

Place into a large mixing bowl, add the sugar, salt, pepper, paprika and mayonnaise and blend well.

Sprinkle with paprika and place in refrigerator until ready to serve.

Enjoy!

I think slow cooker anything is the perfect way to cook on the weekends.  Kind of a fix it and forget about it, if you know what I mean!  And I do use my slow cooker a lot – as you know from some of my recipes!

Now I don’t know about you, but rice pudding has not been on the top of my cravings list for many years.  In fact, my mom used to love the stuff, but we always had it cold, and it was kinda sticky and yucky.  And she put nutmeg on her baked rice pudding! Shudder.  Oh well, to each their own right?

And rice pudding was always one of the ‘dessert choices’ at the local diner.  And it was kept under a glass case, looking like it had been there for quite a while, if you know what I mean. I wonder if their old fashioned rice pudding was made with minute rice? 🙂

So when my sweetie asked me to make him some rice pudding the other day, I kinda went Huh?  He wanted an old fashioned rice pudding with raisins. 

But of course I should have know that he had found an amazing recipe for me to try, and even better it was a homemade slow cooker rice pudding recipe!  Enough said!

But this old fashioned slow cooker rice pudding recipe comes from one of our new food magazines here in Toronto.  I just love finding these recipe treasures.

How Many Kinds of Rice Pudding Recipe are There?
There are lots of old fashioned rice pudding recipes out there.  Baked rice pudding recipe, Crock pot rice pudding recipe and all of them have that secret ingredient.  What’s that you say? Homemade.  Homemade anything is best and this homemade rice pudding recipe is the BEST.

So, how to make old fashioned rice pudding:

This old fashioned rice pudding recipe in the slow cooker is so creamy and easy to make, uses Arborio rice and raisins, and is THE Ultimate Comfort Food!  Be sure to double the recipe though, coz it won’t last long!

So with all of the ingredients in hand, I set out to put together this awesome old fashioned rice pudding with raisins recipe.  Now this recipe uses whole milk.  You can swap that out for cream, half and half (half milk half cream) some recipes use coconut milk and sweetened condensed milk too.  But we’re not getting fancy today.  Just plain old fashioned rice pudding.  OK?

 

  • ½ cup (125 ml) Arborio rice
  • ½ cup (125 ml) sugar
  • 4 cups Cream or whole milk (3%)
  • 3 large Egg yolks (Tip: freeze the whites for later!)
  • 1 tsp (5 mL) Vanilla
  • ¼ twp (1 mL) Cinnamon
  • ½ cup (125 ml) Raisins or dried cherries, cranberries or blueberries (your choice!)

 

 

 

Pour the rice, milk and sugar into your slow cooker (spray with cooking spray) and cover and cook for 3.5 to 4 hours.  Each hour give the rice a stir and cook until the rice is a bit mushy.

When that’s done, whisk the eggs together with a ½ cup of the hot rice mixture.  This is called tempering the eggs.

Then slowly mix this back into the slow cooker rice mixture.  You need to be careful here, since we don’t want scrambled eggs in our old fashioned rice pudding!

Then you can add the raisins (or if you choose dried cranberries, cherries or blueberries!), vanilla, cinnamon.

Cook for another 15 minutes.

Easy Key Lime Pie Recipe, a Fifth Wheel and a Cat 4 Tornado

What does this easy Key Lime Pie recipe, a Fifth Wheel and a Tornado have in common?

Well, just this past week, Southwest Florida has been experiencing hair-raising weather, with Cat 4 Tornado warnings, flood warnings and some folks have experienced tremendous wind damage to their homes and properties.  We were lucky – lots of rain and wind, but no damage.

The last couple of weeks I’ve been enjoying life in sunny Naples, Florida with my husband Mark and our three pooches, Barkley, Max & Millie.  The average temperature has been between 75 and 85 F, near perfect for this Canadian girl during the month of January.  We’ve parked our Fifth Wheel here for the winter at Neapolitan Cove RV Resort and are both embracing the lifestyle and the warmth.  It’s a beautiful spot, sunny and warm, with lots of time for the beach and playing golf.   They even have a beach for dogs!

We Love Key Lime Pie!
We’ve been exploring, trying out some of the local restaurants or barbecuing at home.  Oh and eating pie.  Did I mention that we both have developed a fondness for Key Lime Pie?  Well here in Florida, you can find it on just about every restaurant menu and since I always look at the dessert menu first – (doesn’t everyone?) I’ve been able to sample a few different recipes and decided I needed to share an easy key lime pie recipe with you!

Key Lime Pie was invented by a Key West cook, called Aunt Sally and there are many recipe variations out there.  Key Lime Pie is usually made in a graham cracker crust, and is a baked pie that includes egg yolks, condensed milk, and fresh key lime juice.   Some are topped with whipped cream, and others have delicately browned meringue topping.   But for this no bake easy key lime pie recipe, we’ll stick to the whipped cream topping!

Now I love to bake and whipping up a graham cracker crust is easy to do.  Heck I could even buy a graham cracker crust courtesy of Mr. Keebler!  And instead of fresh key limes, there is always ✅ Nellie and Joe’s Famous Key West Lime Juice .  After all, this is an Easy Key Lime Pie Recipe!  We do have a propane oven in our Fifth Wheel that works really well.   But I wanted to see if I could create a Key Lime Pie filling made the same way I make my Lemon Meringue Pie – on top of the stove.

The ingredients for my easy key lime pie recipe are similar, however instead of corn starch that is the thickener for lemon pie – key lime pie uses sweetened condensed milk and it’s the combination of this and the lime juice that causes the filling to thicken.  For those that have made a lemon pie, you know that mixing the ingredients takes a few extra steps – you can’t throw all of the eggs into the hot lemon mixture since you would end of with lemony scrambled eggs!  But this little extra effort is so worth it!  So with that in mind I set to work to see if I could convert a pie recipe made for baking in an oven, to a cooked pie filling, just like this easy key lime pie recipe.

The result?

Perfection.

Easy Key Lime Pie Recipe

a delicious and easy key lime recipe that is quick to put together and cooks on top of the stove. Perfect for RV life and travel!

Ingredients
  • 1 graham cracker crust - 9"
  • 4 large eggs
  • 1 14 oz can sweetened condensed milk
  • 1/3 cup key lime juice
  • 1/4 cup of white sugar
Instructions
Separate the eggs, put the whites in the freezer!
  1. Beat the egg yolks in a large saucepan until thick with medium speed on your mixer.
  2. Stir in the condensed milk and key lime juice
  3. Cook on the stove on medium-low, stirring constantly until the mixture starts to thicken. Don't leave it or it will stick to the pan and we don't want that to happen!
  4. Once the filling has thickened, remove from heat and let it cool just a bit. Pour it into the graham cracker crust pie shell and set aside to cool. 

  5. Garnish with Whipped Cream, Lime Zest and thin slices of fresh lime.  This is the very best key lime pie you will ever make!

Recipe Notes

Garnish: I use thin slices of key limes, along with a sprinkle of lime zest.

Homemade Dutch Apple Pie is the best!  And this Dutch Apple Pie With Streusel Topping  and Cinnamon Roll pie crust recipe is perfect for Beginner Bakers!  You build the pie in layers, a bottom crust, the apple filling, and the top is really like the top of an Apple Crisp, sweet and crunchy full of brown sugar and butter.  Yum! Yum!

 

When I bake apple desserts, I like to mix it up a bit, and will often use 2 or 3 different varieties of apples. I’ve included a really cool graphic here for you, that shows a sample of some of the wonderful varieties there are.

I went into the grocery store the other day to buy my apples, and I thought I was picking up a bag of McIntosh – but when I went to bake my pie, discovered they were Jersey Macs.  Bon Appetit says the three best apples to bake with are Honeycrisp, Pink Lady and Mutsu – but I think it’s all personal choice and besides its fun to experiment!

Now I like a tart taste to my apple pies, so I always include fresh lemon juice and a little lemon zest.  I also put in about half of the sugar that other recipes ask for.  The reason for this is that apples are very sweet on their own and you want that flavour to come through in your dutch apple pie.

 

 

When slicing up your apples, try to cut the slices fairly thin and pile them up!  I use 4 cups of peeled and sliced apples for only a 9” pie plate.  That’s because the apples will cook down and you will still end up with a glorious mile high apple pie!

My daughter made one the other day – I was so proud!  A lot of the recipes call for using Pillsbury cinnamon rolls and that’s great because they are so easy to use.  However I had a batch of fresh buttery pastry made (just whipped it up in my little food processor) so I was all set.   You can make some too, here is the recipe.  I call it my Insanely Easy Pie Crust.  Honestly it takes about 10 minutes.  Promise!

 

 How to Make Cinnamon Roll Pie Crust from Scratch

This is the fun part! I’ve set out the process step by step and it really is very easy. I think it’s much like the rugelach cookies I make during the holidays!
The whole cinnamon pastry thing is very nostalgic for me too. When we were kids, my Mom would take the leftover pastry from her pie baking and make us a delicious cinnamon roll just for us. And this pie crust tastes just as good!

You will need enough pie crust for a two crust pie. There will be a bit left over, but I usually just use it up in a separate cinnamon roll treat!

  • Roll out the dough, and cut it into a rectangle.
  • Brush with melted butter, and sprinkle with a tablespoon of brown sugar and ½ teaspoon of ground cinnamon.
  • Starting at the long edge, roll the pastry, keeping it fairly tight. I needed two long rolls to fill my deep dish pie plate – I love this pie plate! It’s from Good Cooks, (you can see it when you click the link!) and it can stand up to anything I throw at it! I have a lovely red one at the trailer, and this white one, here in our small space in the city.
  • Using a pastry cutter, slice the rolls into small pieces as show here and place them on a sheet of parchment paper. I follow the guide on my pastry sheet. (another link)
  • Then place a sheet of parchment paper on top and pressing your rolling pin down firmly, roll it out. The little pieces will stick together. Peel off the top layer and quickly flip the pie crust into your well greased pie plate.
  • Don’t worry if a few pieces don’t stick. Just put them in the pie plate and use your fingers to press them into place.
  • Flute the edges, and brush the cinnamon roll pie crust with melted butter.
  • Wrap it up in plastic wrap and chill for 30 minutes.
  • Note: you can see the the finished pie crust is darker than normal and that’s due to the cinnamon mixed throughout!

Ingredients
Cinnamon Roll Pie Crust
  • Pastry for a two-crust pie
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 9 " pie plate
Dutch Apple Pie
  • 4 cups of peeled cored & sliced apples
  • 1 tsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 2 tbsp. corn starch
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1 cup all purpose flour
  • 1/3 cup unsalted butter
Instructions
Pie crust
    Roll out the pastry in a rectangle
    1. spread one side with 1/4 c brown sugar
    2. spring 1 tsp of cinnamon on top of the brown sugar
    3. Carefully roll the pastry along the long side and quite tightly
    4. slice evenly - about 3/4" (don't measure!) and place each slice in the bottom of a 9" pie plate, pressing them in as you go to fill the sides and bottom.
    5. Repeat with the second pie crust - you may not need all of it.
    Dutch Apple Pie
      Mix the sliced apples, white sugar, lemon juice, lemon zest, corn start in a large bowl, making sure the apples are well covered, then set aside.
      1. In a separate bowl mix the brown sugar, flour, and butter - I use a pastry blender to evenly mix the butter.
      2. Build the pie by placing the apple mixture in the bottom of the pie crust, pile it high in the centre, leaving room around the edges.
      3. Spoon the brown sugar mixture all over it, again piling it high. The apples will cook down, so don't worry if it looks like too much topping.
      4. Bake at 350F for 50 minutes or until golden and you can see the apples bubbling.
      Recipe Notes

      Let the pie cool, and serve with your favorite ice cream or freshly whipped cream. Enjoy! Note: prep time includes making pie crust and peeling apples.
