I just love potlucks.  They’re such a wonderful way to get folks together to celebrate an occasion, or just because.  AND I’ve found that it’s a great way to find new recipes from those amazing cooks and bakers out there!

My neighbour Sue brought this amazing Chocolate Cake to the Canada Day Potluck at the trailer park this past July 1st.

I love to whip up a cake from scratch.  Everything goes into one bowl and gets whipped up in no time at all.  You all know how I love to tweak recipes just a little.  I’d been seeing lots of buttermilk cake recipes recently.  So that got me thinking…..

Buttermilk Chocolate Bundt Cake?

Instead of sour milk, like the original recipe called for, why not buttermilkCakes made with buttermilk have an extra rich flavour, and I remember growing up how much my Dad loved buttermilk!  Desserts made with buttermilk were really popular in our home.

And of course I wanted to created the very BEST buttermilk chocolate bundt cake ever!

For this Chocolate Buttermilk Bundt Cake recipe, the addition of a cup of hot water along with the cup of buttermilk and a cup of oil, makes for a very moist cake!

And that of course contributes to one very yummy cake!

TIPS FOR A PERFECT CHOCOLATE BUTTERMILK BUNDT CAKE

  • You can make this in a 13 X 9 pan, or use a Bundt (10″ X 4″) pan.  Sue made hers in a 13 X 9, so I thought I would try the Bundt.  
  • Follow all of the instructions carefully
  • Make sure you line whatever pan you use and grease it really well (butter or shortening and I usually use aluminum foil to line the pan).
  • Once the cake is baked and cools, invert the pan on a platter or plate so that you can peel away the foil and then set it right side up.
  • Make the hot water frosting right away so that lovely warm chocolate can cover your deliciously moist chocolate buttermilk bundt cake.

This is a densely rich chocolate cake.  I think it’s just about perfect, but hey that’s me!  The buttermilk, oil and hot water blends with the cocoa to create a Chocolate Buttermilk Bundt Cake the likes of which you have never tasted.  Trust me on this.  If you follow the recipe exactly, you will now have the best chocolate cake recipe that you can bring out for family dinners, potlucks and birthdays!  It serves 12 people easily, and there won’t be a crumb left I can assure you.

Ingredients
Cake
  • 3 cups white flour
  • 2 cups white sugar
  • 1/2 cup cocoa
  • 1/2 tsp salt
  • 1 tbsp soda
  • 2 eggs
  • 1 cup sour milk
  • 1 cup oil
  • 1 cup hot water
  • 1 tbsp vanilla
Frosting
  • 1 cup sugar
  • 4 tbsp cocoa
  • 4 tsp corn starch
  • 1 cup hot water
  • 1 tsp vanilla
  • 1 tsp butter
Instructions
Cake
  1. Preheat Oven to 350F

  2. First in a large bowl, mix all of the ingredients in order.

  3. Blend until the batter is smooth.
  4. Next, pour into a greased bundt pan

  5. Bake 40 to 50 minutes at 350F
  6. Remove from oven and let cool.
Frosting
  1. In a medium saucepan, mix first four ingredients and cook over medium heat until thickened
  2. Next, stir in the vanilla and butter

  3. Beat until creamy and then pour over the cooled cake

  4. Enjoy!

Some of my favorite Nanaimo Bar recipes include Anna Olson’s on Food Network Canada, and the City of Nanaimo, British Columbia has a great recipe too!

Where do Nanaimo Bars come from? Well, Nanaimo, British Columbia, Canada in about 1953 and we’ve been in love with them ever since.  

Mom’s recipe card actually says Chocolate Squares, and that makes sense because that was the original name for Nanaimo Bars!  And it’s a no-bake recipe, just like our Maple Fudge Toffee Bars!

This delicious concoction of chocolate, coconut, walnuts and butter cream is often served up in Diners and Coffee Shops everywhere to enjoy with that special latte.

This recipe was given to my Mom by the organist at our Church.  We loved them so much and would beg Mom to make them.

We didn’t know they were called Nanaimo Bars back then, so we just called them ‘Miss Hume Squares’ cause that was her name!  Crazy, right?

 

To this day I just can’t resist one, and they are often included on the dessert tray at meetings and conferences.  

They are often cut into really large squares, and really, you only need a small piece to enjoy that amazing sweetness.

And you don’t bite into a Nanaimo bar, you put the whole thing in your mouth and bite down!  All of that crunchy base and creamy custard and chocolate topping just kind of explode inside, with a nice little sugar rush to boot!

This recipe doesn’t use custard powder, but everything else is the same, including cocoa, graham cracker crumbs, coconut and confectioner’s sugar.  

I like how you make the recipe in layers, the bottom layer includes all the crunchy chocolate-y goodness, and includes rolled oats, graham crackers, walnuts and coconuts.

 The custard filling layer is full of sweet butter and confectioners sugar and then there’s that delicious layer of dark melted chocolate!

This is also a great recipe that is very easy to convert to vegan or gluten free nanaimo bars!

Just thinking about biting into that chocolate glaze, and creamy butter frosting, well my mouth is watering!

The classic Nanaimo Bar recipe has a creamy yellow custard filling, but the mint green fillings are very popular too, especially during the holidays, like Christmas or St. Patrick’s Day! Just a few drops of green food colouring and you’re all set.

I love the ease of cookie bar recipes too, but this time I wanted to make a very fancy dessert, so I used a pyrex pie plate instead of a baking pan.  

And when I was finished, I topped the nanaimo bars with some delicious dark and white chocolate buttons!

We’re having some of our family over for brunch tomorrow, and I always make something sweet for the gang, it’s kind of expected!   

So I’m serving this Ultimate Nanaimo Bar recipe as an elegant chocolate pie, and just in time for National Pie Day on January 23rd!

What you Need for your Ultimate Nanaimo Bar Recipe:

 

Bottom Layer:
1/2 cup butter
2 squares semi-sweet chocolate
1/3 cup sugar
1 tsp vanilla
1 egg
1 cup rolled oats
1 1/2 cup desiccated coconut
1/2 cup walnuts

 

Custard Filling:

3 tbsp butter
1/2 tsp vanilla extract
pinch of salt
2 cups icing sugar
2 – 2 1/2 tbsp whole milk

 

Chocolate Topping:
2 squares semi-sweet chocolate
1 tbsp butter

 

Let’s Make It!

  Bottom Layer:


  1. Butter or Grease a 9″ pie plate
    2. Melt butter and chocolate in a saucepan over hot water
    3. Remove from heat and stir in sugar, vanilla, egg, rolled oats, coconut and walnuts
  2. Let the mixture cool for about 10 minutes, until it’s ok for you to touch it
    4. Butter your fingers and press the mixture into a 9″ greased pie plate
    5. Cover and put it in the refrigerator while mixing the next two steps.

Custard Filling:

  1. Mix softened butter, vanilla, and salt until smooth and creamy
    2. Blend in icing sugar alternatively with the cream until everything is blended and the icing is very smooth and
    spreading consistency.
    3. Chill the custard while getting the Chocolate Topping ready.

Chocolate Topping:

  1. Melt semi-sweet chocolate and butter, stir until smooth

Putting it all together

  1. Spread the custard evenly over the bottom layer mixture.
    2. Smooth with a spatula
    3. Spread the Chocolate Topping over the Icing.
    4. Cover with plastic wrap and store in the refrigerator until ready to serve (at least 2 hours)

When you are ready to serve your Nanaimo Bar Pie, I would suggest you make the slices very small, because it is incredibly sweet!

Buttery and golden puff pastry brings out all the flavors of this chicken pot pie

 

There are a number of chicken pot pie recipes around. This chicken pie with puff pastry is one I adapted a few years ago from an easy double crust chicken pot pie recipe in a food magazine sponsored by Walmart.  I don’t think it’s in print now.

But the most famous is the Pioneer Woman Chicken Pot Pie.  It’s to die for!

The first time I made the recipe, I followed the instructions exactly and used a piecrust for the top and bottom.  It was so awesome!

But you know me, right?!  I love to change things up, and find an easier, and quicker way to make dinner!

I like this homemade easy chicken pot pie with puff pastry recipe because:

  • it’s full of flavor
  • comes together very quickly
  • it’s a skinny chicken pot pie! Way lighter in calories than using traditional pie crust
  • the ingredients are either in your pantry or waiting to be picked up on the way home from work!

My adaption shows you how to make your chicken pot pie with puff pastry in a cast iron skillet, and use puff pastry as a top crust! I love to bake using my cast iron skillets – if you don’t have one, check out the link below – and buy one.

These pans will never wear out, you will have it for life!  Just be sure to clean them with only water and a scrub brush and then treat them with a small amount of cooking oil.

Ingredients
  • 6 tbsp. butter
  • ¼ c all purpose flour
  • 1 tbsp. cornstarch
  • ½ c milk
  • ½ c onion cooking
  • 10 oz chicken broth 284 ml, condensed
  • ½ c potato raw, peeled and chopped
  • 1 ½ c cooked chicken store bought –roasted, or pre-cooked package
  • ¾ c peas and carrots frozen
  • Salt and pepper to taste
  • 1 sheet puff pastry frozen, then thawed, the kind that doesn't need rolling
  • 1 stalk celery chopped
Instructions
  1. Mix 2 tbsp of the butter with the flour and put aside
  2. In a separate bowl, dissolve the cornstarch in the milk and set this aside
  3. Using a large cast iron pan, cook the onion and celery in the 4 tbsp. of butter and season with salt and pepper to your taste

  4. Add the potato and the broth and bring to a boil, then cover and cook for 10 minutes.
  5. Add the butter/flour mixture and stir this in.
  6. When the mixture has started to boil again, remove it from the heat source and stir in the milk & cornstarch.
  7. Put the pan back on the stove and bring it to a boil once again, then remove it from the heat and stir in the peas & carrots and the chicken.
  8. Cover with a lid to cool while you get your puff pastry ready!
  9. Preheat your oven to 400°F/200°C with the top rack in the lowest position. This is also known as the bottom third of your oven.
  10. Following the package instructions unroll one sheets of puff pastry.

  11. Make sure the cooled chicken mixture is mounding slightly in the middle of the skillet.

  12. Place the  sheet of puff pastry on the top, and cut a few of vents into the top crust with a knife. This will allow the steam to escape and also will make your crust very flaky!

  13. Crimp the edges of your puff pastry around the edge of the cast iron pan  and brush the entire top crust and edges with milk

  14. Bake for 50 minutes, the let cool for about 20 minutes before serving
  15. Yum!

OK, so I thought about how I could help you make the best ever lemon poppy seed muffins recipe. And I know that baking from scratch is best, but sometimes we all need a little help in the time department. As in, I don’t have a lot of time to bake, Judy. I hear ya!

So this skinny lemon poppy seed muffin recipe is full of amazing goodness, like plain yogurt, fresh lemon juice and zest, and eggs. And a cake mix.

Yep! A white Duncan Hines Cake Mix I had in the pantry and I checked the expiry date (you should always do this) and we were good to go.

You can usually buy cake mixes when they are on sale, and pick up half a dozen at a time, and I bought this one for a dollar.  Seriously!  Because we all have budgets and need to spend our pennies wisely, right?

Now before we get into the ingredients and “how to make lemon poppy seed muffins” I do have a few baking tips that will give you the lightest, most delicious muffins.

Random Muffin Baking Tips:

• Use ingredients at room temperature and this tip includes eggs especially. Cold eggs will give you a flat muffin top and we want that muffin to have a golden round top.
• Sift the dry ingredients for the reason that you will end up with a lighter, fluffier batter. I know it takes a few extra minutes, but it’s so worth it and you’ll be glad you did!
• Mix the wet in the dry – and fold them together ever so lightly. Because heavy mixing of muffin batter equals heavy, tough muffins. Enough said.

 

 

 

Who came up with the first recipe for Lemon Poppy Seed Muffins?  Well wiki says poppy seed muffins have been around a long time, Americans have been making a variety of muffins since the 19th century.

What You Need:

• 1 white cake mix
• 2 tbsp. poppy seeds
• 1 tsp. baking powder
• 1 tsp. baking soda
• 1/4 tsp. salt
• 1 medium egg & one egg yolk
• 1 cup non fat yogurt plain
• 1/4 cup canola oil
• 1/3 cup lemon juice
• 1 tbsp. zest (lemon)

Lemon Yogurt Glaze

  • 1 cup powdered sugar
  • 1 ½ tablespoon non fat yogurt
  • 1 tablespoon lemon juice

Let’s make it!

Preheat Oven to 350F/180C
  1. In a large bowl, sift together the cake mix, baking powder, baking soda and salt.
  2. Stir in the poppy seeds
  3. In a smaller bowl, whisk the eggs, yogurt, oil, lemon juice and zest together
  4. Make a well in the dry ingredients (just like the image shown)
  5. Pour the wet ingredients into the dry ingredients
  6. Using a spatula, fold together very gently. You want to mix both, but don’t be fussed if you can see some dry bits. This isn’t like mixing cake batter, ok?
  7. Line your muffin pan with paper muffin cups, and scoop in the batter, filling the cups 2/3.
  8. Bake for 18-20 minutes until the tops are golden and a toothpick comes out clean.
  9. Let cool and glaze. Store in an air tight container – or freeze.

A match made in heaven to be sure and so quick and easy to make, I’m wondering why I haven’t thought of this before?

I know you are going to love these mini spaghetti pies!  And those picky eaters of yours?  Yep, you got this one!

This is by far the best spaghetti pie casserole you will ever make.

A delicious spaghetti ‘pie crust’ topped with a yummy meat sauce, and lots of Parmesan, ricotta and mozzarella cheese.  It doesn’t get much easier.

I had some extra ingredients, so  I doubled the recipe and also baked a 9″ spaghetti pie – to freeze for one of ‘those’ days, when I don’t feel like cooking a big dinner – 🙂

What I like about this recipe is that you actually use whole tomatoes, and season it yourself, not like the jar sauces that are already seasoned for spaghetti.

It has a really FRESH taste, that’s BIG on flavor.  Know what I mean?

What You Need:

Crust
• 2 cups spaghetti
• 1/2 cup Parmesan cheese
• 1 egg
• 1 1/2 tsp butter
Filling
• 2/3 cup ricotta cheese
• 2 tsp butter
• 1/2 cup onion
• 1/2 cup green pepper
• 1 clove garlic
• 6 oz lean ground beef
• 1 cup canned whole tomatoes
• 2 tsp tomato paste
• 1 cup mozarella cheese

Let’s Make It!

1. Combine all ingredients for crust
2. Spray mini pie tin (or 9″ pie plate) with nonstick cooking spray

3. Spread spaghetti mixture over bottom and up the sides to form a crust
4. Preheat oven to 350F
5. Spread ricotta cheese over the bottom of crust and set aside
6. in a skillet heat butter, add onion, green pepper and garlic and sauté until tender

Easy Spaghetti Pie Casserole in 30 Minutes!

Ingredients
Crust
  • 2 cups spaghetti cooked
  • 1/2 cup Parmesan cheese grated
  • 1 egg beaten
  • 1 1/2 tsp butter softened
Filling
  • 2/3 cup ricotta cheese
  • 2 tsp butter
  • 1/2 cup onion chopped
  • 1/2 cup green pepper diced
  • 1 clove garlic minced, add more if you love garlic!
  • 6 oz lean ground beef cooked
  • 1 cup canned whole tomatoes drained and chopped (reserve juice)
  • 2 tsp tomato paste
  • 1 cup mozarella cheese shredded
Instructions
  1. Combine all ingredients for crust
  2. Spray mini pie tin (or 9" pie plate) with non stick cooking spray
  3. spread spaghetti mixture over bottom and up the sides to form a crust
  4. Preheat oven to 350F
  5. Spread ricotta cheese over the bottom of crust and set aside
  6. in a skillet heat butter, add onion, green pepper and garlic and saute until tender
