S’mores Magic Cookie Bar Pizza!

The ooey gooey combination of chocolate, coconut, and graham crackers topped with a thick layer of sweetened condensed milk – oh wow!  You know what I mean!

S’mores recipes are really popular right now and this one is no exception!

My mom used to make Magic Cookie Bars when we were kids but she called them Hello Dolly’s.   The ooey gooey combination of chocolate, coconut, graham crackers topped with a thick layer of sweetened condensed milk – oh wow!  You know what I mean!

This recipe has been baked I would guess millions of times and is also known as Magic Cookie Bar or Seven Layer Squares.  I wanted to make a sweet treat to bring to my office, but didn’t want to include the walnuts – there are so many serious nut allergies these days.

Everyone loves s’mores right?  So it was marshmallows to the rescue – mini-marshmallows that is.  I layered them on the bottom and then again on the top.  The sweet smell of baking chocolate, coconut and marshmallows was incredible and it was all I could do to not dig in! Just like s’mores around the campfire!

I decided to use a tart tin, instead of the usual square baking pan – I love doing that, converting a recipes for squares to a pie or tart, I’m always thinking in circles I guess! They don’t call me @pieladybakes for nothing! Once baked I sliced it with my pizza cutter.  Cool huh?

I started with  graham cracker crust bottom, followed by a layer of mini-marshmallows, then a cup of white chocolate chips, unsweetened desiccated coconut, then a cup of dark  chocolate chips, and a final layer of mini-marshmallows.   All topped with 300 ml of sweetened condensed milk.  Yum-my!

As it baked the marshmallows started to pop up around the edges – it was pretty cool.

Just before I serve my S’mores Hello Dolly’s Tart, I drizzle it all with my special homemade chocolate sauce.

Ingredients
  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 1 cup unsweetened coconut
  • 1/2 cup dark chocolate chips
  • 1/2 cup white chocolate chips
  • 1 can sweetened condensed milk 10 oz
  • 1 3/4 cups mini marshmallows
  • Chocolate Sauce
Instructions
  1. Place the oreos in your food processor and blend until crushed
  2. Press the oreo mixture into the bottom of a greased tart tin
  3. Mix the graham cracker mixture on top of the oreo cookie base
  4. Layer half of the mini marshmallows
  5. Layer the white chocolate chips
  6. Layer the unsweetened coconut
  7. Layer the dark chocolate chips
  8. Pour the sweetened condensed milk over all
  9. Top with the remaining half of the mini-marshmallows
  10. Bake at 375F/190C for about 40 minutes - be sure to check your oven at 30 minutes. When those marshmallows are golden brown you know your S'mores Hello Dolly's Tart is done!

Dec 18, 2013 Tourtière is one of those decadent holiday recipes that I only make once a year. I love preparing it because it reconnects me with my French Canadian roots. It’s a traditional Québecois meat pie that combines ground pork and beef with potatoes , onions, and spices, all enveloped in a buttery pie crust.


What is in a Tourtière?  Well in addition to deliciously lean cuts of beef and pork, that are slowly simmered, I think the unique combination of Tourtiere spices that includes cinnamon, cloves, nutmeg and summer savoury, provide an earthy, rich flavour.

This traditional tourtiere recipe can be made ahead in a batch and frozen, either in the large 9.5” family size, or in an individual 4” size.  Pop the frozen Tourtière into the oven for 30-35 minutes, add a salad and presto!  A meal in minutes. Alternatively, bake the pie in a microwavable dish, and dinner can be ready quicker than that!

An easy recipe, and perfect for beginner pie bakers.  This Tourtière recipe is based upon the Mme Jehane Benoit Tourtière recipe, so I hope you enjoy it!

Not sure what to serve with a Tourtière?  Shown here with a tart tomato relish, but you can use your imagination and add any type of side dish.  The Tourtiere is a meal unto itself, so I tend to choose lighter sides, like a tossed salad, or grilled root vegetables.

A traditional French-Canadian dish, Tourtière, or meat pie is usually served around the festive season. It's such a hearty meal and easy to make in batches, so batch bake several and put them in the freezer. You can pull one out and pop it in the oven one night when you are pressed for time. Just add a salad!

  • 2 pie crust recipe uses lard, makes top and bottom crust
  • 2 lb. ground beef lean
  • 1 ½ lb. ground pork lean
  • 2 onions large, cooking
  • 1 cup celery chopped
  • 1 cup parsley chopped
  • 1 ½ c water filtered
  • 3 tsp summer savory dried
  • 1 tsp cinnamon ground
  • ¼ tsp nutmeg
  • Salt and pepper
  • 2/3 cup rolled oats large flake
  • 1 egg yolk large
  • 3 tsp. milk
  • 1 tsp cloves ground
Instructions
  1. In a large saucepan with a heavy bottom, (at least 3 quarts/litres) cook, beef, pork, chopped onion, celery, parsley, water, and all of the spices and herbs – on medium heat, until the mixture comes to a boil and the meat is broken down and looks crumbly – this will take 15-20 minutes (the meat should not be pink).  Then let the mixture simmer on low heat until the liquid is gone – this will take 50 – 60 minutes TIP: keep checking to make sure your burner isn’t set to high and overcooks the mixture.
  2. Once cooked, stir in the oats and set aside to cool.  If you didn’t have time to make your pastry you can cover the mixture and put it in the refrigerator for 2-3 days.
Putting it together
  1. Put half of the meat mixture into one pie shell.  Roll out the top crust and with the edges moistened (see 5 Steps to Perfect Pie Crust!) flute the two crusts together with your fingers.  Brush the crust with a mixture of the milk and egg yolk (this will give the crust a golden glow) Cut vents in the top crust to allow steam to escape.  Repeat for the second pie.

  2. Bake in the bottom third of the oven at 400F for 35 to 45 minutes or until the crust is golden.  Let the pie stand for 5-10 minutes before serving.  It will be piping hot!  Each pie will serve 6 to 8 people.
  3. To freeze your authentic tourtiere recipe:  double wrap in aluminum foil and then place inside a zippered freezer bag to prevent freezer burn.

Recipe Notes

Tip: you can get the bottom crust ready, but leave the rolling of the top crust until you have your filling prepared. Prep time includes the chilling of the pastry dough.

So what or who is Harvey Wallbanger?  A cocktail that became popular in the 70’s includes vodka, OJ and Galliano.  Galliano is a delicious Italian liqueur that has a light vanilla flavor to it. Garnished with maraschino cherries.  Yum. Yum.

Mix it all up and put in a baking pan.  I used my 7” spring form pan, the one that fits in both my slow cooker and Instant Pot.  I love the shape.

The secret to using a slow cooker to bake is to make sure the moisture gets whisked away from the cake.  So to address that, a tip is to top the slow cooker with several sheets of paper towel, just underneath the lid.  Leaving the lid slightly ajar also helps.

Now here is something I did not think of.  That half way through cooking, to rotate my cake pan so that it gets golden all around.  And to adjust the lid so that steam comes out the opposite side.  This will give you a cake that is well baked and golden all over.

Isn’t it beautiful?

Light vanilla flavors, mixed with orange for a zesty combination.  The cake and glaze have instant vanilla pudding mixed in.  Now I think that is magical in itself.

Be sure to let the cake cook completely, before you apply the glaze.  I think even putting the cake in the refrigerator for an hour is a great idea.

  • 1 box vanilla pound cake mix 16 oz
  • 3 eggs
  • 1/3 cup vanilla instant pudding
  • 1/4 cup salad oil
  • 2 tbsp Galliano Liqueur
  • 2/3 cup orange juice
  • vanilla instant pudding remainder of box for Glaze
  • 1/2 cup powdered sugar (icing sugar)
  • 2/3 cup orange juice For Glaze
  • 1 tbsp Galliano Liqueur For Glaze
Instructions
  1. Mix together the first six ingredients for the cake.

  2. Pour batter into a well greased loaf or cake pan that will fit inside your Slow Cooker. (I used my 7" springform pan)
  3. Place pan in the bottom of the slow cooker
  4. Put several sheets of paper towel just underneath the slow cooker lid to absorb excess moisture
  5. Bake in the covered slow cooker on High for 2 1/2 to 3 1/2 hours (mine was baked at 3 hours)

  6. Invert cake onto a serving platter and let cool thoroughly - you may wish to refrigerate for 30 to 60 minutes

  7. Mix together the glaze ingredients and spoon over cake.  Decorate with sliced oranges and maraschino cherries!

Mark and I just returned from a glorious 14 day vacation to Italy.  It truly was the trip of a lifetime.  Florence, Rome, Tuscany with so many wonderful places in between!  One of the highlights of the trip?  An outdoor concert featuring Andrea Bocelli in his home town of Lajotica.  The concert was really outdoors in a huge field, but the sound, underneath the stars, in Italy?  Well I’m sure you get the idea.

Another highlight of our trip was Cantucci Toscani – Italian Almond Biscotti!  We developed a real passion for these delicious little cookies.  Ok, it was close to obsession.  By the time we were ready to leave our last location, the beautiful Castello del Nero in Tavernelle val di Pesa – we were hooked!  They were bringing us two bowls at a time. 🙂

I was determined I would have to learn to make biscotti when we returned home.  By the way, if you ever want to visit the most romantic and luxurious hotel spa in Tuscany, the Castello del Nero is it!  We would go back in a heartbeat!  An amazing facility, excellent staff and customer service and well the food makes you think you are in Heaven.  Yes, it’s that good.

How Do You Make Cake Mix Biscotti?
A yellow cake mix, plus delicious raw unsalted almonds, butter and vanilla.  Save a little time, enjoy the convenience of a cake mix and still have that exquisite crunchy vanilla flavour. And voila! Cake Mix Biscotti was born.

Ingredients
  • 1 18 oz Yellow Cake Mix 18 oz/432 gYellow Cake Mix
  • 1 cup all purpose flour
  • 4 large eggs room temperature
  • 1/2 cup unsalted butter melted
  • 2 tsp vanilla extract
  • 1 cup almonds whole, raw
Instructions
  1. Preheat the oven to 350F degrees.
  2. Pour the cake mix into a mixing bowl. Stir in sifted all purpose flour.
  3. Make a well in the centre and add the eggs, margarine and vanilla extract.
  4. With an electric beater mix on medium speed for 2 to 3 minutes until the dough does not stick to the sides of the mixing bowl. It will look and feel like play dough!
  5. On a lightly floured board, divide dough into two halves.
  6. Roll each half into a log about 1" in diameter.
  7. Roll each log gently to the edge of the board and then continue rolling it onto a lightly sprayed 11” x 15” baking sheet.
  8. Flatten the top of each cookie log until it is about 3" wide.
  9. Bake for 20 minutes.
  10. Remove baking sheet from the oven and let stand for 10 minutes.
  11. Reduce oven temperature to 325 and do not turn off.
  12. Gently slide one cookie log onto the board that you rolled out the dough on.
  13. Using a serrated knife or better still an electric carving knife, slice each log across the width into 3/4" slices.
  14. Place cookies cut side down back onto the baking sheet and return them to the oven for another 10 minutes.
  15. Remove cookies to cooling rack to cool completely.
  16. Enjoy!

The crispy and hard crunch of a biscotti comes from double baking. In this recipe 20 minutes, slice and then bake another 10 minutes. These are so easy to make!

Ingredients
  • 2 cups flour

  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 1 cup canola oil
  • 3/4 cup evaporated milk
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1 tsp. vinegar
  • 3/4 cup finely chopped strawberries divided
  • 1 cup powdered sugar
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine flour, sugar, baking soda, and salt.
  3. In a medium bowl, stir together oil, evaporated milk, vanilla, and eggs
  4. Add to dry ingredients.
  5. Stir just until combined, add vinegar, and mix thoroughly being careful not to overmix.
  6. Fold in ½ cup strawberries.
  7. Lightly grease a doughnut pan
  8. Fill molds three-quarters full and bake about 12 minutes
Strawberry Frosting Recipe:
  1. Mix together remaining ¼ cup strawberries, powdered sugar, and 1 Tbsp. lemon juice, mixing until you have a thick paste - you may need either more powdered sugar or lemon juice.
  2. Place doughnuts on a cooling rack and with parchment paper underneath, spread glaze on tops.

Chocolate Chunk Banana Bread!

Just add 1/2 cup chocolate chunk bits to the batter and slather on some yummy cream cheese frosting.

Banana bread is real comfort food, chock full of sweet bananas, sugar and crunchy walnuts it satisfies on so many levels! My mother-in-law was an amazing baker and I’ve used her recipe for years, and shared it with so many of my friends.

I like to have a slice after dinner, slightly warmed and spread with butter, it almost melts in my mouth!    I’m one of those people who always has at least 5 or 6 frozen black bananas in the freezer, I just can’t throw them out when the over ripen.  Sometimes I use them in smoothies,and banana chocolate chip pancakes are the bomb!

Recently I’ve been itching to bake some copycat recipes and Starbucks was at the top of the list! Their banana bread is so moist and delicious  I don’t know how anyone can resist! So I’m making a copycat version using a recipe I found on food.com – a great recipe database.  I mixed it up a bit by adding an extra banana, so that means 4 large bananas instead of 3.

Banana Bread is a quick bread or a no yeast bread and just like muffins, requires a light hand when mixing.  In fact you really don’t mix at all – more like folding the dry ingredient mixture into the wet ingredients.  Over mixing might give you a nice smooth batter, but I can guarantee your Banana Bread will be dry and tough.  And that would be just so disappointing!  So lesson here is to treat your batter lovingly and gently mix it together.

Starbucks Banana Walnut Bread (Copycat)

Ingredients
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/8 cups sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk
  • 1/2 teaspoon vanilla extract
  • 4 ripe medium-large bananas mashed
  • 1/2 cup chopped walnuts
  • 1/3 cup chopped walnuts in addition to 1/2 cup
Instructions
  1. Preheat oven to 325.
  2. Grease a 9x5x3 loaf pan and dust with flour.
  3. Blend the flour, baking soda, and salt; set aside.
  4. Mix the egg, sugar, and vegetable oil until combined.
  5. Add the flour mixture to the egg mixture and when blended, add the buttermilk, vanilla, and mashed bananas; mix well.
  6. Fold 1/2 cup of chopped walnuts and pour batter into prepared loaf pan.
  7. Top the batter with remaining 1/3 cup of walnuts.
  8. Bake for 45-60 minutes until a toothpick comes out clean.
Recipe Notes

I found that by adding the extra banana I needed to bake the Banana Bread for the full 60 minutes - check your oven - times will vary.
