Apple Pie Muffin Recipe

We all love easy muffin recipes and this is a great one using freshly chopped apples!  I like to use Granny Smith apples, like the ones shown here – but any apple that is good for baking will do.

I love this apple pie muffin recipe as a healthy choice that I can grab and go – on my way to work, the golf course, or out to walk the dogs!

 

They are so full of flavor and of course a little brown sugar never hurt anyone, am I right?

What’s the secret to light fluffy muffins? The trick to making muffins that are light in texture and rise beautifully is less is more.  What I mean by that is muffin batter requires very little mixing.  Just fold the ingredients until everything is moistened, but don’t overmix.  It took me a while to learn this!  I would beat up the batter until it was very smooth, and then end up with very tough and chewy muffins.  Not so good!

Drop the muffin batter by spoonfuls into your greased muffin tin. In a pinch you could make this apple pie muffin recipe with prepared apple pie filling, but this recipe only takes one really large apple so chopping it up takes no time at all.

This recipes come from my Grandma’s Recipe Book.  She kept all kinds of handwritten recipes, on cards, backs of envelopes, anything at all really.  See the recipe in the image above?  My Grandma wrote that.  And even though I have most of her recipes electronically, nothing will make me get rid of this special treasure!

A freshly baked batch of homemade muffins makes a wonderful gift for a special friend and a great way to enjoy Saturday coffee shop n the deck with your neighbors.

Ingredients
  • 1/4 cup butter
  • 1/2 cup white sugar
  • 1 egg - beaten
  • 1/2 cup milk
  • 1 1/2 cup all purpose flour or whole wheat if you prefer
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup chopped apples
Instructions
  1. Directions
  2. Cream butter, sugar and egg
  3. Add Milk
  4. Mix the dry ingredients separately, then fold into the wet ingredients - but don't over stir
  5. Mix in apples
Topping
  1. sprinkle a small amount of brown sugar and cinnamon on top
  2. Bake at 375F/xxC for 20 to 25 minutes until golden -
  3. Makes 8 large muffins or 12 small ones.
  4. Yum! Yum!

I love this simple maple fudge recipe for so many reasons, but I think the biggest reason, besides the out of this world sweetness, is the fact that I can make it on top of the stove and that’s a keeper for trailer life.  If you’ve read my ABOUT page, you will know that my husband Mark and I love the RV life and spend a large part of the year at our trailer in Kawartha Lakes, Ontario, Canada.

In our family, we call this recipe Sweet Eileen’s, after my Mom, Eileen.  Mom was a sweetheart and loved to try out new recipes, just like I do!  I have a huge book full of recipes clippes from newspapers and magazines, some of them go back to the 1950’s.  I am so grateful to have such a legacy.

These no bake Maple Fudge Toffee Bars are just like fudge!

Ingredients
Base
    1/2 cup butter
    • 1/2 cup cocoa
    • 1 tbsp water
    • 1 cup brown sugar
    • 2 eggs beaten
    • 1/2 cup unsweetened coconut flakes
    • 1/2 cup chopped walnuts
    • 1/4 tsp salt
    • 2 cups graham cracker crumbs
    • 1/2 tsp vanilla
    Fudge Icing
    • 1/2 cup butter
    • 1 cup brown sugar
    • 4 tbsp whole milk
    • 1 tbsp maple syrup real
    • 2 cups confectioner's sugar
    Instructions
    BaseMix butter, cocoa, water, sugar and eggs in a saucepan
    1. Bring to a boil over moderate heat
    2. Boil for one minute
    3. Removed from heat and add remaining ingredients and mix well
    4. Press into an 8 X 8 pan (or 13 X 9 makes a shorter bar), cover with plastic wrap and refrigerate
    Fudge Icing - Melt butter, brown sugar in sauce pan
    1. Boil over low heat for 2 minutes, stirring constantly
    2. Add Milk and Maple Syrup and bring to a boil
    3. Remove from heat and let cool until lukewarm
    4. Stir in icing sugar
    5. Frost the base
    6. Refrigerate until set

    These delicious bars are so sweet I cut them really small, like you would fudge. This recipe is great for hostess gifts, you can double the batch, and it will keep for 2 to 3 weeks in the refrigerator.

    An Apple Pie Coffee Cake?  You’ve got to be kidding, right?  Oh no I’m not!

    I do love coffee cake!  All that cinnamon, brown sugar and walnuts dripping down the sides of a yummy richly flavoured cake and slathered thickly with an icing sugar glaze.  When I have friends over for a cup of coffee and a gab and I serve my apple pie coffee cake to them, well you can just feel the love from here!

    As I write this I’m savouring a big ole slice, just for me, and slightly warmed.  The topping is so rich (think Dutch Apple Pie) and of course my coffee cakes are stuffed here and there with delicious cream cheese!  Oh my goodness, my mouth is sticking together…will keep typing.

    Coffee cake recipes in our family go way back – to my mom and grandma.  My family recipe is already on the blog and enjoyed by thousands – Salted Caramel Coffee Cake is the bomb!

    Ingredients:

    Topping:

    • 4 tbsp. melted butter
    • 1 cup dark brown sugar
    • 1 cup chopped walnuts
    • 2 tsp. ground cinnamon
    • 4 cups peeled and slice apples (I used Paula Red’s)

    Coffee cake:

    • 3 tsp. baking powder
    • 2/3 cup white sugar
    • 1 ¾ white flour
    • ½ tsp. salt
    • 4 oz. plain cream cheese
    • 1/3 cup unsalted butter
    • 1 cup half and half cream
    • 1 egg
    • ½ tsp. vanilla

    Icing Sugar Glaze

    • 1 1/2 cups icing sugar
    • 1 tsp vanilla
    • 1-2 tbsp. water

    Instructions:

    Mix the brown sugar, cinnamon and melted butter well

    Stir in the apples and chopped walnuts and set aside

    In food processor add dry ingredients, baking powder, flour, white sugar, salt, and pulse until blended

    Cut softened cream cheese and butter into chunks and add to food processor and pulse until blended. The mixture will stick together if pressed in your hand.

    Put the mixture from the food processor into a large bowl.  Make a well in the centre and add the cream, vanilla, and egg.  Break the egg yolk and blend slowly, just until everything is moistened.  Like when you are making muffins.

    Preheat the oven to 375 and grease and 8 X 8 square pan.

    Press the cake mixture into the plan

    Add small chunks of cream cheese around the top – I push them in slightly with my finger!

    Spoon on the apple and brown sugar topping (this will sink into the cake as it bakes)

    Bake for 30 to 35 minutes.

    Apple Pandowdy is a recipe I’ve been wanting to bake for some time now.  I just love the name don’t you?  It’s a classic North American dessert, created in the 19th century, and is basically an apple pie, but the pastry or ‘dough’ is placed on top of the filling in pieces or dropped by spoonfuls, rather than rolling out a top crust.

    There are a couple of variations of this recipe.  Martha Stewart’s version of apple pandowdy, which is more like an apple pie, with squares of piecrust on top, and then there is the Taste of Home version, and that’s the recipe I’ve re-created here that looks more like an apple cobbler.

    I like the apple cobbler version of apple pandowdy for a variety of reasons, but mostly just because it’s a quick and easy dessert to put together and takes less time than making pie crust.  And I love baking desserts in cast iron skillets and I really wanted to use these new mini skillets.  I think they are so adorable!

     

    Ingredients

    • 1 cup packed brown sugar
    • 1-1/4 cups all-purpose flour, divided
    • 1/2 teaspoon salt, divided
    • 1 cup water
    • 1 teaspoon lemon juice
    • 2 teaspoons baking powder
    • 5 tablespoons butter, divided
    • 3/4 cup milk
    • 5 cups sliced peeled apples
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1 teaspoon vanilla extract
    • Whipped cream, optional

    Directions

    • In a saucepan, combine brown sugar, 1/4 cup flour and 1/4 teaspoon salt. Add water and lemon juice; cook over low heat until thick. Cover and set aside.
    • In a bowl, combine baking powder and remaining flour and salt. Cut in 3 tablespoons butter. Add the milk and mix just until moistened (a few lumps will remain); set aside.
    • Arrange apples in 9-in. square baking dish; sprinkle with cinnamon. Add nutmeg, vanilla and remaining butter to sauce; pour over apples. Drop dough by spoonfuls over sauce. Bake at 350° for 55 minutes or until top is brown and apples are tender. Serve warm with cream if desired. Yield: 9 servings.

    Harvest Apple Galette | Just Like Apple Pie!

    Have a slice of my Harvest Apple Galette won’t you? Served warm, drizzled in caramel sauce, wouldn’t it be great with a cup of coffee? I love making galettes they are a deliciously easy way to make a pie, and of course very yummy!

    Even though the Equinox has come and gone, we have plenty of the spectacular fall season ahead and nothing says fall more than apples and the harvest.  So I really hope you love this Harvest Apple Galette.

    A Galette is French for Tart, and the premise is basically the same.  How long does it take to bake a galette?  About the same time as a pie, but the difference is that when baking a galette you don’t need to fuss with fluting the pastry edges, and instead of a pie plate, you use a cookie sheet.

    I’ve made galettes before – there is a Pear and Walnut Galette on the blog. It’s so easy, it will become your go to for pie baking.

    RECIPE: one pie crust rolled out (about 14 – 16″)

    TIP: roll out the pie crust on parchment paper and transfer it to the cookie sheet before you build your galette.

    Ingredients: (see the recipe card below)

    8 small apples (I used Paula Red) peeled & cored

    white sugar

    cinnamon

    fresh lemon juice

    fresh lemon zest

    cornstarch

    Directions:

    Following the recipe below, gather all of the ingredients and mix together and place in the middle of the pie crust

    Next and in a separate bowl, mix 1/2 cup brown sugar, 1/2 cup flour and 1/4 cup softened unsalted butter until the butter is completely blended.

    Sprinkle this mixture on top of the apple mixture.

    Wrap the pie crust around the apples, folding as you go. See how easy it is? Bake at 350F/180C for 55 minutes on a cookie sheet lined with parchment paper. Let cool, drizzle with caramel sauce and dig in!!!

    • one pie crust - 14- 16 "

    Easy Pecan Pie

    Pecan pie is a great recipe for beginner pie bakers.  I was once a beginner pastry chef too!  But as I have gained more experience, my creativity has resulted in many different recipes – straying from the traditional tried and true – to venturing out on my own.  As any good pie baker will tell you, we all love to take a basic recipe and add our own awesomeness to it!

    Pecan pie has been around forever and is often on the dessert menu in restaurants and available at the supermarket.  It has always, to me, left a little bit to be desired.  What I mean by that is that some recipes are very bland.  You would think that it would turn out to be just one big butter tart with nuts in it wouldn’t you? Or as delicious as a handful of pralines?   I just haven’t found that to be the case.  I like to use all sugar or honey in my pecan pie – not the over-processed corn syrup that is often recommended.

    So over the years, I’ve been experimenting with different ingredients, trying to create a pie that could truly be called awesome.  I think you’ll agree that this recipe is exactly that.  And the awesomeness?  Real semi-sweet chocolate chips.    Served warm – this pie is like one big chocolate pecan cookie!

    Awesome Pecan Pie

    Ingredients
    • 1 baked shortcrust pastry deep dish pie shell
    • 1 cup of packed dark brown sugar
    • 1 cup of liquid honey
    • 1 tbsp.  Molasses
    • 5 tbsps. unsalted butter
    • ½ tsp salt
    • 2 cups chopped pecans
    • 1 cup semi-sweet chocolate chips
    • 2 tsp pure vanilla extract
    • 3 eggs beaten
    Instructions
    1. Mix the sugar, honey, molasses, butter and salt in a saucepan and bring to a boil on medium to low heat, stirring constantly.
    2. Remove the saucepan from the heat, and then add the nuts and the chocolate chips.
    3. Beat the eggs in a separate bowl with a whisk and then add them to the filling.
    4. Let the filling cool slightly, before putting it into the warm pie shell.
    5. You might need to put the pie shell back into the oven to warm it up before adding the pecan filling.
    6. Bake in the lower third of an oven at 350F for 35 to 45 minutes.
    Recipe Notes

    This pie is amazing served warm with a scoop of French Vanilla Ice Cream.

    Pecan pie is a great recipe for beginner pie bakers. The awesomeness is real chocolate chips stirred in with the pecan filling just at the end!
