Banana bread is real comfort food, chock full of sweet bananas, sugar and crunchy walnuts it satisfies on so many levels! My mother-in-law was an amazing baker and I’ve used her recipe for years, and shared it with so many of my friends.

So I’m making a copycat version using a recipe I found on food.com – a great recipe database. I mixed it up a bit by adding an extra banana, so that means 4 large bananas instead of 3.

In fact you really don’t mix at all – more like folding the dry ingredient mixture into the wet ingredients.
