Easy Copycat Starbucks Banana Bread Your Family Will Love

Chocolate Chunk Banana Bread!

Just add 1/2 cup chocolate chunk bits to the batter and slather on some yummy cream cheese frosting.

Banana bread is real comfort food, chock full of sweet bananas, sugar and crunchy walnuts it satisfies on so many levels! My mother-in-law was an amazing baker and I’ve used her recipe for years, and shared it with so many of my friends.

I like to have a slice after dinner, slightly warmed and spread with butter, it almost melts in my mouth!    I’m one of those people who always has at least 5 or 6 frozen black bananas in the freezer, I just can’t throw them out when the over ripen.  Sometimes I use them in smoothies,and banana chocolate chip pancakes are the bomb!

Recently I’ve been itching to bake some copycat recipes and Starbucks was at the top of the list! Their banana bread is so moist and delicious  I don’t know how anyone can resist! So I’m making a copycat version using a recipe I found on food.com – a great recipe database.  I mixed it up a bit by adding an extra banana, so that means 4 large bananas instead of 3.

Banana Bread is a quick bread or a no yeast bread and just like muffins, requires a light hand when mixing.  In fact you really don’t mix at all – more like folding the dry ingredient mixture into the wet ingredients.  Over mixing might give you a nice smooth batter, but I can guarantee your Banana Bread will be dry and tough.  And that would be just so disappointing!  So lesson here is to treat your batter lovingly and gently mix it together.

Starbucks Banana Walnut Bread (Copycat)

Ingredients
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/8 cups sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk
  • 1/2 teaspoon vanilla extract
  • 4 ripe medium-large bananas mashed
  • 1/2 cup chopped walnuts
  • 1/3 cup chopped walnuts in addition to 1/2 cup
Instructions
  1. Preheat oven to 325.
  2. Grease a 9x5x3 loaf pan and dust with flour.
  3. Blend the flour, baking soda, and salt; set aside.
  4. Mix the egg, sugar, and vegetable oil until combined.
  5. Add the flour mixture to the egg mixture and when blended, add the buttermilk, vanilla, and mashed bananas; mix well.
  6. Fold 1/2 cup of chopped walnuts and pour batter into prepared loaf pan.
  7. Top the batter with remaining 1/3 cup of walnuts.
  8. Bake for 45-60 minutes until a toothpick comes out clean.
Recipe Notes

I found that by adding the extra banana I needed to bake the Banana Bread for the full 60 minutes - check your oven - times will vary.

We love to eat at Red Lobster and yes we also love their Cheddar Bay Biscuits.  So Mark decided he would try to make them at home, and found our Easy Cheddar Bay Biscuits recipe over at food.com.   He did so well, that he bought this really cool little loaf pan.  And the beauty of using this pan, in addition to these cute little loaves, is that there is very little mess! Easy Cheddar Bay Biscuits Recipe | Red Lobster Copycat

Ingredients
Biscuits
  • 2 1/2 cups Bisquick baking mix
  • 1/4 cup cold butter
  • 1 cup sharp cheddar cheese grated
  • 3/4 cup cold whole milk
  • 1/4 teaspoon garlic powder
Topping
  • 1/4 cup melted butter
  • 1/2 tsp garlic powder
  • 1/2 tsp chopped fresh parsley
Instructions
  1. Preheat oven to 400°F
  2. Combine Bisquick and cold butter. Don't combine too thoroughly. There should be small chunks of butter about the size of peas. Tip: I used a pastry blender
  3. Add cheddar, milk and 1/4 tsp garlic powder
  4. Mix by hand until combined, but don't over mix
  5. Drop 8 equal portions into the greased mini loaf pan cavities
  6. Bake for 15-17 minutes or until tops are light brown or a toothpick comes out clean
  7. Melt 1/4 cup butter in a bowl
  8. Stir in 1/2 tsp garlic powder and the chopped parsley
  9. Use a pastry brush to spread garlic butter mixture over tops of biscuits while they are still warm
  10. Enjoy!

Lemon loaf cake or lemon bread is one of my favorite quick breads to make.

This Starbucks Copycat Recipe For Lemon Loaf Cake is so easy to make, your family will want you to make it all the time!

I think a freshly baked loaf makes a wonderful gift.  I love to take a freshly baked ‘something’ when I’m invited out for dinner or just because.

That sweet and tart citrus flavour wrapped up in a dense loaf, when the crumbs all stick together on your fork, you know what I mean? Oh and make sure there is lots of creamy white glaze drizzled all over it.

This is a quick breads recipe, which means when mixing the batter, to use a very light hand when combining the dry ingredients into the wet.

Ingredients
Cake1 (18.25 ounce) package yellow cake mix
  • 2 pkgs lemon pudding mix 4.3 ounce (pie filling) non-instant l
  • 1/2 cup vegetable oil
  • 4 eggs large
  • 8 ounces sour cream
  • 1/2 cup milk
  • 6 tablespoons lemon juice freshly squeezed
Icing
  • 3 tablespoons lemon juice freshly squeezed, or more to taste
  • 2 1/2 cups confectioners' sugar
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.
  2. Combine cake mix, pudding mix, oil, eggs, sour cream, milk, and 6 tablespoons lemon juice into bowl of stand mixer; beat for 2 minutes and pour into prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in the pans for 20 minutes before removing from pans to cool completely on a wire rack.
  4. Beat confectioners' sugar and 3 tablespoons lemon juice together in a bowl until smooth; spread thickly over the top of the loaves and let set before slicing, sprinkle with lemon zest.
