Now remember I’m a Canadian gal, so we celebrate Canada Day Weekend in style, with lots of BBQ, fireworks, and making s’mores around the campfire. I can’t think of a better way to celebrate our heritage!

*Australia celebrates the Queen’s Birthday on June 13 (except for the states of Western Australia and Queensland; Canada celebrates the Queen’s Birthday on the 4th Monday in May and in the U.S. Memorial Day – is celebrated in style on May 30th this year! Canada Day is July 1st, and the US celebrates Independence Day on July 4th. Australia celebrates Australia Day on January 26th.

Slow-cooker Pulled Pork
Best cuts for pulled pork
There are lots recipes for pulled pork. Some recommend the pork butt, some the pork shoulder and you can even use pork tenderloin. I like to use the shoulder – you can get a good sized one – around 4-5 pounds, it fits in the average sized slow cooker (3-5 quarts) and is reasonably priced at the butcher or grocery store.
Once your pork shoulder is cooked, and drained, following my recipe, you need a premium BBQ sauce to bring out the flavour of the pork. In our home that means our own special homemade BBQ sauce. So here is the recipe, just for you. It’s so easy to make, you will always want to have lots on hand – for barbecuing any time of the year. The hickory smoke flavour is perfect for pulled pork.
Serves 6- 8 hungry campers!
1 4 to 6 lb pork shoulder (or bigger – depends on the size of your crowd)
2 cups of water
Salt and pepper
3-4 whole cloves
2 chopped cooking onions
2 pints of Best BBQ Sauce (recipe is here!)
Season the pork shoulder with salt and pepper, and add to the slow cooker with the water, onions and garlic.
Set the slow cooker setting to low – 8 hours – so that it will be ready 2.5 hours before game time.
Go outside and play!
Drain the pork shoulder
Put it back in the slow cooker pot, and using forks pull it apart, shredding all of the meat
Stir in Best BBQ sauce
Turn it on high and let it cook for 1-2 hours
Come and get it! Place large servings of pulled pork on your favorite crusty roll, ciabatta bun, sourdough rolls, add a big scoop of Creamy Coleslaw either on the sandwich or on the side – that’s a personal choice!
Best Creamy Coleslaw
My Mom used to say the secret to the best coleslaw was adding enough onion! Coleslaw can take many forms but the tangy sweetness in this recipe is always great with outdoor BBQ, smoked meat and our slow cooker pulled pork. It comes together in minutes and you can serve it again the next day.
One medium sized head of green cabbage
2-3 small cooking onions
2-3 medium carrots
1 1/2 cups mayonnaise or your favorite salad dressing
2 tbsp. sugar
Salt and pepper
Pinch of paprika
Cut the cabbage into chunks and shred in your food processor – but pulse only, so that you get a coarse grind.
Chop the onion and the carrots in the food processor as well, chopping both finely.
Place into a large mixing bowl, add the sugar, salt, pepper, paprika and mayonnaise and blend well.
Sprinkle with paprika and place in refrigerator until ready to serve.
Apple Hand Pies
These are so easy your kids can make them for you the day before the big game! I just discovered frozen puff pastry a short time ago. Yes, I know welcome to the 21st century! But being a scratch baker, I couldn’t imagine that something frozen and packaged could taste as good as something that I could prepare from scratch. Boy was I wrong.
1 or 2 packages of frozen puff pastry
1 can of apple pie filling
1 egg yolk – beaten
2/3 cup of Icing sugar
water – to make the glaze.
Unroll the puff pastry, and place both the parchment paper and pastry on your cookie sheet.
Cut the pastry into small circles – about 3″ in diameter.
Spoon the apple pie filling in on the one side of the circle – leaving enough room so that you will be able to fold over the dough
Fold the dough over and press the edges with a fork – they will look like mini tacos!
Brush the pastry with an egg yolk wash and then sprinkle with sugar.
Repeat until all of the pie filling is finished. Makes about 3 dozen hand pies.
Bake at 375 F for 15-20 minutes – until the pastry puffs up and is flaky and golden.
Let cool before serving as the filling will be very hot! Using a squeeze bottle, squeeze the icing sugar glaze over the top.
